FRENCH TOAST WITH BANANA AND CREAMY NUTELLA
(SERVES 4)
4 SLICES OF PANETTONE CUT IN TO HALVES (1/2 INCH THICK)
2 BANANAS SLICED
8 TABLESPOONS OF NUTELLA
SPREAD THE NUTELLA ONTO A PIECE OF BREAD, ADD THE BANANA, COVER WITH ANOTHER PIECE OF BREAD.
FOR THE BUTTER
4 EGGS
1 TABLESPOON OF SUGAR
1 PINCH OF SALT
1 CUP OF MILK
1 TABLESPOON COFFEE SYRUP
1 TABLESPOON GRAND MARNIER
1 TEASPOON VANILLA EXTRACT
MIX ALL THE INGREDIENTS WELL AND DIP SANDWICH INTO THE BUTTER. COOK IN A NON-STICK PAN FOR 2 TO 3 MINUTES EACH SIDE AT MEDIUM HEAT. ADD A LITTLE BIT OF CLARIFIED BUTTER TO THE PAN AS NEEDED.
FOR THE BERRIES COULI’
1 LB OF MIXED BERRIES
5 OZ OF SUGAR
JUICE OF 2 LEMONS
SAUTE THE BERRIES WITH THE SUGAR FOR 5 MINUTES. ADD LEMON JUICE AND LET COOK FOR 3 MORE MINUTES. ADD TO MIXER AND STRAIN BEFORE SERVING.
STEAK AND EGG PRESSED PANINI
(SERVES 4)
4 PIECES OF FOCACCIA BREAD (3 INCH BY 3 INCH)
4 EGGS (SCRAMBLED WITH FRESH GROUND BLACK PEPPER)
8 SLICES OF SHARP CHEDDAR CHEESE
12 OZ OF THIN SLICED BEEF (SIRLOIN)
SAUTE THE MEAT WITH OLIVE OIL, SALT AND PEPPER. PUT 3 OZ OF MEAT ON EACH PICE OF FOCACCIA WITH ONE SCRAMBLED EGG AND 2 SLICES OF CHEDDAR CHEESE.
PUT SANDWICH IN THE PANINI MACHINE AT 350 F FOR 3 ½ MINUTES
CUT IT INTO HALVES AND SERVE HOT.
TORCHED OATMEAL CRÈME BRULEE WITH DRIED FRUIT
(SERVES 6)
4 EGG YOLKS
3 OZ OF SUGAR
½ QUART OF HEAVY CREAM
2 PIECES OF VANILLA BEANS (SCRAPE THE SEED OUT OF THE BEANS)
MIX ALL THE INGREDIENTS TOGETHER WITH A WHISK AND ADD:
5 OZ OF COOKED OATMEAL
1 OZ OF DRIED PINEAPPLE
2 OZ DRIED CRANBERRIES
1 OZ DRIED APRICOT
1 OZ DRIED PAPAYA
CUT THE FRUIT INTO SMALL PIECES AND MIX EVERYTHING TOGETHER. COOK IN INDIVIDUAL CREAM BRULEE COCETTES (4 OZ. SIZE) IN THE OVEN IN A BAIN-MARIE (DOUBLE BOILER) FOR 40 MINUTES AT 350 F.
ONCE COOKED, LET IT REST FOR TWO HOURS BEFORE TORCHING WITH THE SUGAR (LIKE A REGULAR CRÈME BRULEE).
